
Ingredients
240 g cooked quinoa
15 g butter
300 g chicken wings
2 tbsp oil
6 cups chicken broth
80 carrot chunks
80 g sweet potato chunks
1 piece bay leaf
2 tsp soy sauce
Salt to taste
2 tsp sugar
7 tbsp coconut milk
Chicken Marinade
15 g curry powder
1 clove minced garlic
50 g chopped onion
1/2 tsp salt
1/2 tsp turmeric
1/2 tsp paprika
Method
- Mix marinade ingredients. Add to the chicken and marinate for 30 minutes.
- Heat oil in a pan. Fry chicken on low heat.
- Add chicken broth and turn up the heat to bring to a boil. Add carrot and cook on medium heat for a while.
- Add bay leaf and sweet potato. Continue cooking until the ingredients soften.
- Season the sauce with soy sauce, salt and sugar. Add coconut milk and mix well.
- Heat butter in a pan. Toss quinoa in the melted butter.
- Serve quinoa with chicken wings and curry sauce.
