A Chicken Curry and Quinoa Dish – Recipe from my Clippings

Ingredients

240 g cooked quinoa
15 g butter
300 g chicken wings
2 tbsp oil
6 cups chicken broth
80 carrot chunks
80 g sweet potato chunks
1 piece bay leaf
2 tsp soy sauce
Salt to taste
2 tsp sugar
7 tbsp coconut milk

Chicken Marinade

15 g curry powder
1 clove minced garlic
50 g chopped onion
1/2 tsp salt
1/2 tsp turmeric
1/2 tsp paprika

Method

  1. Mix marinade ingredients. Add to the chicken and marinate for 30 minutes.
  2. Heat oil in a pan. Fry chicken on low heat.
  3. Add chicken broth and turn up the heat to bring to a boil. Add carrot and cook on medium heat for a while.
  4. Add bay leaf and sweet potato. Continue cooking until the ingredients soften.
  5. Season the sauce with soy sauce, salt and sugar. Add coconut milk and mix well.
  6. Heat butter in a pan. Toss quinoa in the melted butter.
  7. Serve quinoa with chicken wings and curry sauce.
