
Ingredients

8 hard boiled eggs, chopped
1/4 cup light mayonnaise
1 tbsp chopped green onion
1/2 tsp curry powder
8 slices pumpernickel bread
8 slices cheddar cheese
2 tbsp finely diced green and red bell peppers
1 tsp chopped fresh herbs
salt and pepper to taste
hot pepper sauce to taste
Method
- Preheat grill.
- In a bowl, mix eggs, mayonnaise, green onion, curry powder, salt, pepper and hot pepper sauce. Set aside.
- Lightly toast pumpernickel bread. Cover with half a slice of cheese. Spread egg mixture over cheese. Sprinkle with bell peppers and herbs. Top with remaining half slice of cheese.
- Put on the grill until cheese melted and serve.
Makes 4 servings
