Summer Sandwich

Ingredients

8 hard boiled eggs, chopped
1/4 cup light mayonnaise
1 tbsp chopped green onion
1/2 tsp curry powder
8 slices pumpernickel bread
8 slices cheddar cheese
2 tbsp finely diced green and red bell peppers
1 tsp chopped fresh herbs
salt and pepper to taste
hot pepper sauce to taste

Method

  1. Preheat grill.
  2. In a bowl, mix eggs, mayonnaise, green onion, curry powder, salt, pepper and hot pepper sauce. Set aside.
  3. Lightly toast pumpernickel bread. Cover with half a slice of cheese. Spread egg mixture over cheese. Sprinkle with bell peppers and herbs. Top with remaining half slice of cheese.
  4. Put on the grill until cheese melted and serve.

Makes 4 servings
