Dim Sum chefs there are taking their dainty delicacies to new levels by creating new tasty, flavourful and appealing items to satisfy the palate of their ever-demanding customers.

Below are some examples of modern dim sum that are made by chefs adopting new measures in the ingredients and techniques. They are using one or several of the following approaches:

  • organic ingredients
  • non-traditional local ingredients
  • more nutritious whole grain
  • vegetable oil and butter instead of the traditional lard
  • fresh umami ingredients instead of MSG
