Ground Beef Soup with Cauliflower

Ingredients:

9 oz – Lean ground beef
9 oz – Cauliflower florets
3 stalks – Green onion (chopped)
1½ tsp – Cooking wine

Beef Marinade:

2 tsp – Light soy sauce
¼ tsp – Sugar
3 Tbsp – Water
2½ tsp – Cornstarch
2 tsp – Oil

Seasoning Broth:

900 ml – 25% reduced sodium chicken broth
12 cup – Water
2 tsp – Sugar
1 tsp – Light soy sauce
1/8 tsp – White ground pepper
2 tsp – Sesame oil
1/8 tsp or to taste – Salt

Thickening Solution:

3½ Tbsp – Cornstarch
3 Tbsp – Water

Method:

  1. Add marinade to beef and set aside for about 10 minutes.
  2. Steam cauliflower florets for 7 minutes. Remove from heat and coarse chop. Set aside.
  3. Mix seasoning broth ingredients and thickening solution separately.
  4. Heat 1 tsp oil in a wok or Dutch oven. Add cooking wine and seasoning broth. Bring to a boil. Add beef. Stir and cook for 1 minute. Add thickening solution. Keep stirring until soup reboils and thickens. Return cauliflower to wok. Bring to a simmer. Turn off heat. Add green onion. Mix well and serve hot.
