Eating Nuts Helps People with Metabolic Syndrome

For the first time, scientists report a link between eating nuts and higher levels of serotonin in the bodies of patients with metabolic syndrome (MetS), who are at high risk for heart disease. Serotonin is a substance that helps transmit nerve signals and decreases feelings of hunger, makes people feel happier and improves heart health. It took only one ounce of mixed nuts (raw unpeeled walnuts, almonds and hazelnuts) a day to produce the good effects. The report appears in ACS’ Journal of Proteome Research.

Researchers from the University of Barcelona in collaboration with the Human Nutrition Unit of the Rovira i Virgili University explain that the rise in obesity around the world means more and more patients have MetS. Symptoms include excess abdominal fat, high blood sugar and high blood pressure, which increase the risk of developing type 2 diabetes and heart disease. Dietary changes may help patients shed the excess weight and become healthier, among the changes, the regular consumption of nuts — which are jam-packed with healthful nutrients, such as healthy fats (unsaturated fatty acids) and antioxidants (polyphenols) — have been recommended to fight the metabolic abnormalities associated with MetS.


Joint Venture to Develop Omega-3 Canola Oil

Cargill and BASF Plant Science entered into an agreement to co-develop canola oil containing EPA/DHA omega-3 polyunsaturated fatty acids. The products generated through the collaboration will address two key issues facing companies seeking to broadly deliver omega-3s to global consumers: shelf stability and cost.

“This partnership supports Cargill’s objective of providing the healthiest oils to our customers and consumers globally,” said Jenny Verner, president, Cargill Specialty Canola Oils. “By addressing stability and cost, we are confident that EPA/DHA canola oil will be embraced by food, pharmaceutical and nutritional supplement manufacturers globally.”

“Both BASF Plant Science and Cargill believe that the market for omega-3s is very attractive long-term and that this co-development and commercialization partnership will create value for our customers and both companies,” said Marc Ehrhardt, senior vice president, BASF Plant Science. “The combination of BASF’s innovative technology and Cargill’s leading position in the global supply chain for canola oil will make EPA/DHA canola oil-based products broadly accessible to consumers globally.”


Szechuan Beef Noodle


500 g beef
500 g fresh or dried wheat noodle
2¾ tbsp chili soybean
2 tsp minced ginger


1 tbsp dried chili
1/4 tsp ground szechuan pepper
1/4 tsp salt


  1. Cut beef into dices.
  2. Cook noodle in boiling water until done. Drain and transfer to 5 serving bowls.
  3. Heat 3 tbsp oil in wok. Sauté chili soybean and ginger until fragrant. Add beef and seasoning ingredients. Stir-fry briefly. Add 2 cups water and bring to a boil. Continue to simmer for 3 to 4 minutes.
  4. Ladle beef and soup over noodle in serving bowls. Serve hot.
