A High-fibre Spicy Lentil Salad


One 19 oz can lentils
1/2 cup diced cooked chorizo
1 red or yellow bell pepper
3 cups baby spinach


1 tbsp mango chutney
1/2 tsp curry powder
1 tbsp olive oil
salt and pepper to taste


  1. Drain and rinse lentil.
  2. Mix seasoning ingredients in a large bowl. Add lentil, red pepper, chorizo and mix well.
  3. Serve the lentil mixture over a bed of spinach.

Makes 5 servings.
