Grilled Turkish Beef Kebabs


1 lb ground beef
1 egg, beaten
1 slice white bread
3 cloves garlic, minced
1/4 cup finely chopped mint
1 tsp ground cumin
1/2 tsp cinnamon
1/2 tsp salt
12 large skewers


  1. Soak skewers in water.
  2. Oil grill and heat to medium.
  3. Tear bread into small pieces and add to beaten egg. Mash bread until most of the egg is absorbed. Mix in beef, garlic, mint, cumin, cinnamon and salt.
  4. Divide meat mixture into 6 portions. Form each into a log about 4 inches long and flatten gently. Insert 2 skewers into the patty. Repeat with remaining meat and skewers.
  5. Place skewed patties on grill. Cover and cook for 4 minutes. Turn and cook until the meat is done, about 4 to 5 more minutes.
  6. Serve with salad, grilled red onion and pitas.

Makes 6 servings.
