Stir-fried Egg White with Crab and Milk


egg white of 6 eggs
1 cup milk
1 live crab
10 oz broccoli


1/4 tsp salt
1 tbsp cornstarch
1/2 tsp chicken broth mix


1 tsp shredded ginger
2 tbsp Chinese rice vinegar
2 tbsp sugar


  1. Steam the crab. Remove crab roe and meat from the crab. Set aside.
  2. Cook broccoli in boiling water with some salt. Remove and arrange on serving plate.
  3. Mix sauce ingredients in a small bowl.
  4. Beat egg white with milk and seasoning. Mix in crab roe and meat.
  5. Heat wok with 2 tbsp oil. Add egg mixture slowly and fry until done. Remove and put on top of broccoli. Serve with sauce on the side.
