Salad with Green Bean and Tofu


7 oz green beans, trimmed
10 oz silken tofu, drain and cut into pieces
3 stalks green onion, finely shredded
3/4 cup fresh parsley
1 tbsp toasted sesame seeds
black pepper to taste

Soy Dressing

1 tbsp lemon juice
2 tbsp light soy sauce
1/2 tsp minced ginger


  1. Blanch beans in hot water for 2 minutes or until just tender. Remove to cold water to cool. Drain.
  2. Place tofu and soy dressing in a saucepan, simmer over medium heat for 2 to 3 minutes. Remove and set aside.
  3. Put beans, green onion and parsley in serving bowls. Top with tofu and drizzle with the soy dressing. Sprinkle sesame seeds and black pepper over and serve.

Makes 2 servings.
