7 oz green beans, trimmed
10 oz silken tofu, drain and cut into pieces
3 stalks green onion, finely shredded
3/4 cup fresh parsley
1 tbsp toasted sesame seeds
black pepper to taste
1 tbsp lemon juice
2 tbsp light soy sauce
1/2 tsp minced ginger
- Blanch beans in hot water for 2 minutes or until just tender. Remove to cold water to cool. Drain.
- Place tofu and soy dressing in a saucepan, simmer over medium heat for 2 to 3 minutes. Remove and set aside.
- Put beans, green onion and parsley in serving bowls. Top with tofu and drizzle with the soy dressing. Sprinkle sesame seeds and black pepper over and serve.
Makes 2 servings.
