Omelet with Potato and Onion


5 eggs, well beaten
3 tbsp olive oil
3 oz raw lean ham
1 onion, thinly sliced
1 clove garlic, crushed
6 oz potato, thinly sliced
salt and pepper


  1. Heat oil in a frying pan, add ham and cook for a few minutes. Add onion and garlic. Fry gently until the onion is half cooked.
  2. Add potato and season with salt and pepper. Cook until soft.
  3. Add egg and stir to mix. Cook until the underneath of omelet is brown. When the mixture is barely set, place the pan under the grill to brown the top surface. Remove and cut into wedges to serve.
