Nigella Lawson’s Jam Donut Muffins


125 ml milk
85 ml corn or other vegetable oil
1 large egg
½ tsp of vanilla extract
200 g self-raising flour
100 g caster sugar
12 tsps strawberry jam
100 g unsalted butter
150 g granulated sugar


  1. Preheat the oven to 190ºC, and oil the cups of a muffin tin.
  2. Then beat together the milk, oil, egg and vanilla extract and very, very gently fold the mixture into the flour and caster sugar (don’t overbeat).
  3. Put a spoonful of mixture into each cup and then a teaspoonful of jam, and then another spoonful of mix.
  4. Put into the oven and bake for about 20 minutes until gloriously risen.
  5. Then melt some butter and put the granulated sugar onto a plate. Roll the muffins in the butter and then in the sugar.

Makes 8 donut-muffins
