Ingredients
125 ml milk
85 ml corn or other vegetable oil
1 large egg
½ tsp of vanilla extract
200 g self-raising flour
100 g caster sugar
12 tsps strawberry jam
100 g unsalted butter
150 g granulated sugar
Method
- Preheat the oven to 190ºC, and oil the cups of a muffin tin.
- Then beat together the milk, oil, egg and vanilla extract and very, very gently fold the mixture into the flour and caster sugar (don’t overbeat).
- Put a spoonful of mixture into each cup and then a teaspoonful of jam, and then another spoonful of mix.
- Put into the oven and bake for about 20 minutes until gloriously risen.
- Then melt some butter and put the granulated sugar onto a plate. Roll the muffins in the butter and then in the sugar.
Makes 8 donut-muffins
