Pork in Sweet Wine Sauce


1 oz dried porcini mushroom
4 pork scallops
2 tsp balsamic vinegar
8 cloves garlic
1 tbsp butter
3 tbsp marsala wine
several rosemary sprigs
10 juniper berries, crushed
salt and ground black pepper


  1. Soak dried mushrooms with hot water just enough to cover them.
  2. Brush pork with 1 tsp of the vinegar and season with salt and pepper. Cook garlic in a small pan of water for 10 minutes until soft. Drain and set aside.
  3. Melt butter in a large frying pan. Add pork and fry quickly until browned on the underside. Turn the meat over and cook for another minute.
  4. Add wine, rosemary, mushrooms, 4 tbsp of the mushroom juice, garlic, juniper and remaining vinegar.
  5. Simmer gently for about 3 minutes until the pork is cooked through. Season lightly and serve with noodles and green vegetables.

Makes 4 servings.
