Indian-style Vegetable Dish with Cauliflower and Yam


2 Tbsp grape seed oil
1 large onion, finely chopped
2 medium-sized ripe tomatoes, finely chopped
1 large cauliflower, chopped into bite-sized pieces
2 large yams, finely chopped
1 Tbsp grated ginger
1 Tbsp cumin seeds
1 Tbsp Garam Masala
1 tsp ground turmeric
1 tsp salt
1/2 cup water


  1. Place the oil and onion in a non-stick skillet over medium-high heat and cook for 4 minutes.
  2. Add the ginger, cumin seeds, garam masala, turmeric, and salt and cook for 2 minutes.
  3. Stir in the tomatoes, yams, and water, cover the pan with a lid, and reduce the heat to medium-low. Cook until the yams are tender, about 7 minutes, stirring occasionally.
  4. Add the cauliflower, stirring to mix everything well. Put the lid back on, and cook until the cauliflower is still somewhat crunch,, 5 to 8 minutes. Enjoy with rice or plain rotis.

Makes 4 servings.
