Big Toast with Beef and Mango Salsa


about 8 oz steak
olive oil, for brushing
1/4 baguette

Fresh Mango Salsa

1/2 large mango
2 tablespoons chopped cilantro
freshly squeezed juice off lime
1/4 to 1/2 teaspoon wasabi paste
sea salt


  1. To make the salsa, peel the mango, chop the flesh, and put in a bowl. Sprinkle with the chopped cilantro.
  2. Mix the lime juice and wasabi paste in a separate bowl and season with a little salt. Pour over the mango and herbs and toss gently. Set aside.
  3. Trim off any fat or sinew from the meat and brush with olive oil. Heat a stove-top grill-pan until very hot, brush with more oil, then press the meat down on it for about 2 minutes. Flip over and cook for a further 2 minutes, then cook for a further 2 minutes on each side, or until cooked to your taste. Lift onto a board, cover with foil, and let rest for 10 minutes.
  4. When you’re nearly ready to serve, split the baguette in half and toast the cut side under a preheated broiler until golden. Slice the meat thinly and arrange on top of the baguette. Add the mango salsa, spoon over any meat juices, and serve immediately.
