Chocolate Waffles with Semi-sweet Chocolate Sauce

2/3 cup unsweetened cocoa powder
2 teaspoon ground cinnamon
2 sticks butter, melted
1-1/2 cups granulated sugar
4 eggs, beaten
2 cups all-purpose flour
2 tablespoons milk
2 teaspoons vanilla paste or extract
confectioners’ sugar and unsweetened cocoa powder, for dusting

Chocolate Sauce

1/2 cup milk
1/2 cup light cream
1/4 cup granulated sugar
8 ounces semisweet chocolate, chopped
4 tablespoons unsalted butter, softened

  1. To make the sauce, put the milk, cream, and sugar into a saucepan and heat gently until the sugar has dissolved. Remove from the heat and add the chocolate, stirring until melted. Stir in the butter. Keep warm and set aside.
  2. Preheat a waffle iron. Sift the cocoa powder into a large bowl and stir in the cinnamon and melted butter. Add the sugar, eggs, and flour, then whisk in the milk and vanilla until smooth.
  3. Fill the waffle iron with some of the batter and cook according to the manufacturer’s instructions. Repeat until all the batter is used.
  4. Dust the waffles with confectioners’ sugar and cocoa powder and serve warm with the sauce.
