Mexican Omelette

Ingredients

1 cup each chopped yellow and green pepper
1/2 cup chopped onion
4 whole eggs
4 egg whites
1/2 cup cheddar cheese, grated
1/2 cup salsa

Method

  1. Spray large non-stick frying pan with no stick cooking spray. Add peppers and onion. Cook and stir on medium-high heat 5 minute or until tender. Remove from frying pan and set aside.
  2. Whisk together eggs and egg whites with 1/4 cup water.
  3. Pour eggs into frying pan and cover pan. Cook 6 minutes.
  4. Top with pepper mixture and cheese. Using spatula, fold egg mixture over filling and cover. Cook 3 minutes or until cheese is melted. Serve topped with salsa.

Makes 4 servings.
