Blackened Catfish


2 teaspoons paprika
1 teaspoon cayenne pepper
I teaspoon garlic powder
I teaspoon dried thyme
teaspoon salt
1 teaspoon finely grated lemon zest
1 tablespoon olive oil
4 catfish fillets, about 4 oz each
1 tablespoons lemon juice


  1. In a large shallow dish, combine the paprika, cayenne, garlic powder, thyme, salt and lemon zest. Add the catfish fillets and turn to coat both sides, pressing the herb-and-spice rub into the fish.
  2. In a large nonstick frying pan over medium-high heat, heat the oil.
  3. Add the fish and cook for 4 minutes. Pour the lemon juice over the fillets, turn and cook until the fish just separates when pressed with a fork, about 4 minutes more.
  4. To serve, divide among 4 individual plates.

Makes 4 servings.
