Ingredients
4 skinless cod fillets (about 1 lb)
2 tbsp Balkan-style plain yogurt
1/2 tsp Dijon mustard
4 stalks green onion, green part only, chopped
1 cup panko (Japanese bread crumbs)
1/4 cup grated Parmesan cheese
3 tbsp butter, melted
Salt and pepper to taste
Method
- Stir together yogurt, mustard and onion. Mix together panko, cheese and butter in another bowl. Set aside.
- Pat fish dry with paper towel, place on parchment-lined baking sheet. Sprinkle with salt and pepper. Spread green onion mixture over fish evenly. Put panko mixture on top and press down lightly.
- Bake in 425ºF oven until crust is golden and fish flakes easily, about 10 to 12 minutes.
