Fish with Cheese Crust

Ingredients

4 skinless cod fillets (about 1 lb)
2 tbsp Balkan-style plain yogurt
1/2 tsp Dijon mustard
4 stalks green onion, green part only, chopped
1 cup panko (Japanese bread crumbs)
1/4 cup grated Parmesan cheese
3 tbsp butter, melted
Salt and pepper to taste

Method

  1. Stir together yogurt, mustard and onion. Mix together panko, cheese and butter in another bowl. Set aside.
  2. Pat fish dry with paper towel, place on parchment-lined baking sheet. Sprinkle with salt and pepper. Spread green onion mixture over fish evenly. Put panko mixture on top and press down lightly.
  3. Bake in 425ºF oven until crust is golden and fish flakes easily, about 10 to 12 minutes.

Makes 4 servings.
